I usually love these but the specs matter and not enough are included here. Basically they heat up a round area – often smaller than you’d like – of a pot or pan made of iron or steel (it has to attract a magnet, and some types of stainless don’t or attract a neodymium alloy magnet only weakly and they won’t do). Also the cheaper ones don’t give you much choice of power levels – typically you get several that are too low for most uses, several that are almost equally high, and one or two in between that might be a lucky match. Lots of power levels means lots of power electronics means more expensive to make. The cooling fans for the electronics can be noisy, and the radio interference can be very heavy – a problem if one still uses a radio.

Great for a flat-bottomed wok. In fact, I suspect that that’s the usual utensil with most of them sold…
