The Uintah Jack is creamy and super sharp. The age on this one is about 2.5 years. It’s got some serious flavor! I recommend trying it since it’s a limited-time cheese that’s almost gone. ^Katie
Just a thought. If you have friends that you think may like our cheeses (and why wouldn’t they!), then you might consider gifting the cuts you’re not crazy about. They’d make great holiday host gifts with a bottle of vino. I’m sure you have plenty of parties to attend. ^Katie

I am quite embarrassed to admit this but I let my barely buzzed cheese get molded. The espresso rub is now green! Do you think this can still be salvaged? Can I cut away the espresso rub/mold and still enjoy the cheese underneath? I opened the package to eat some of the cheese when it first arrived but it got buried underneath other stuff in the meat/cheese drawer in the fridge. I can’t believe I let this happen!
I’d cut and remove the moldy parts and test a tiny morsel of the unmolded portion. Whether or not it tastes like mold is dependent upon how long it’s been moldy. The flavor and aroma can permeate the inside of the cheese if you give it enough time. ^Katie
Welcome back, Katie. I hope you will offer individual cheeses or mix up the combos a little bit in the future but most importantly, keep bringing the deliciousness!
You also might consider putting this on your packaging; “WARNING! Consuming Beehive Cheeses may cause spontaneous happy dancing.”
Guilty! We JUST opened one of your cheeses that had a bit of green on it. I cut away the greenish color and, unfortunately, the other wonderful coating. We have been eating it all this week during Winter Storm Knife in Buffalo, NY. We have been fine with it and absolutely LOVE your cheeses! In for several, including gifts for the nieces!
Hey, Chip! We love the Barely Buzzed, but have decided to order other combos. I’d be happy to take a Barely Buzzed off your hands–you can bring it to Wooster in the Spring. I know that it will hold! Let me know and then, remind me!
OK, will do (done). I broke down and ordered a second combo last night and was thinking that with 5 days left I’ll probably end up buying all four before the offer ends. I need to try them all in case they get offered individually in the future. That’s my story and I’m sticking to it!
Kudos are in order for the Beehive Cheese Company! They sent this email earlier this week:
"3 wins at World Cheese Awards
This past week three of our cheeses won Bronze medals in London at the 2014 World Cheese Awards.
And the winners were…
Barely Buzzed, rubbed with espresso and lavender
Apple Walnut Smoked, cold smoked with walnut wood and red apple
Promontory, a creamy Utah original
For a limited time we’re offering the World Cheese Award Winners gift box for $31.99. Enjoy 1 box of RUSK crackers along with 6 ounce cuts of Barely Buzzed, Apple Walnut Smoked and Promontory."
I want to order two different sets of cheeses and send them to one address as a gift. Will they come in one package or will they be sent in two packages?
Good question. I’m guessing separate packages since they can’t be combined in the shopping cart but would be interested to hear from WD or Katie about it. I hope they can consolidate the orders for greater efficiency but it’s been my experience in the past that separate wine.woot orders ship separately even if they are multiple orders for the same thing.
