Its a toss up between deep fried, grilled, pan fried and sushi. It depends on the type of fish. Cod, walleye or catfish deep fried. Tuna or salmon for sushi. Salmon for fried salmon patties or grilled on wood planks.

Exactly. Imo, Halibut must be pan fried. Salmon must be baked. Cod deep fried, etc.

I think the idea is the taste of the fish should be accentuated. As you implied, what works best varies.

Pan fried trout tends to concentrate the flavor without being overly greasy.
Broiling with skin on at high heat e.g., Salmon Skin works wonders for a crispy texture for salads
Cod as you said is more succulant deep fried.
Sea bass is wonderful steamed with spring onions, a touch of ginger, and soy with red chilli to taste.
