Supposedly there are SB fans out there, come on try some!
There’s quite a few around here that love the varietal. This one looks really zippy! Any RS? What was the goal with using the 20% oak?
No RS, The 20% Neutral Oak fermentation was for mouthfeel. *0% of the lot was fermented in stainless to preserve as the fruit.
Interesting, what food pairings would you recommend with this particular white?
typo 80% tank fermented sorry, My food pairing are any fish, except lobster and scallops, lighter pork dishes.

Oh, no! I’m sorry I missed this - Calstar is our go-to Sauvignon Blanc. Really great balance of mineral notes, quite dry, great acidity. Next time!
