Of course, it depends on the sophistication of the customer. If you’re willing to remove 11 screws, and the entire bottom panel, you CAN get to the memory slots.
For everything you list I would say it would be enough. Video editing would be your big question though, and a lot of that comes down to what program you are using for editing. Looking at the Adobe Premier specs for example the only thing they don’t specifically list is this video card, but I have a suspicion it would be OK, otherwise the rest of it seems to meet their minimum specs. Realize a lot of it depends on your project, 4K video will be a lot harder on the system than 1080.
So basically for $90 more, you can get Open Box Excellent with free 2-day shipping and it will come with the full one-year manufacturer’s warranty… While it’s not ‘Certified’, i can’t find any meaningful difference between Certified Excellent and Open Box Excellent. One has been reviewed by Geek Squad but honestly, does that really mean anything?
