I am pretty sure that flap meat in New England is referred to as “Steak Tips”, which are a very popular grilling steak, often pre-marinated and mechanically tenderized.

Mmmm! Tri tip!

I really don’t care where it’s popular or what-not. But at that price it should be putting itself on the grill.
IMHO it also looks old and extremely dry.


Definitely a regional thing. Skirt steak is for fajitas and Korean BBQ. Also, is there no tri tip in Texas?

Best tri tip quesadillas I ever had were from a Texas BBQ place, albeit in Los Angeles.
