can the cheese be made with soymilk, or nut milk such as cashew?
I watched a product video online elsewhere and the demonstrator did say you could use soy milk. I imagine there are recipes on the company’s website as well.

yes, just make sure you either have an 800w microwave OR you adjust your microwave time accordingly to your wattage.
you can use plain yogurt (instead of vinegar or lemon juice) as an acidifier, but not sure if it would turn it into greek yogurt.
