The blue flame generated by natural gas or propane heat can reach closer to 3600F.
Even at only half of the adiabatic (ideal conditions) temperature, you’re looking at around 1800F.
Maybe that’s why the bottoms of eraten’s 4-year-old set aren’t holding up so well, the flame is literally burning off the coating?
We have an inexpensive set of ceramic nonstick (under $100 for the set) in a light purple and those bottoms are holding up well - but on a conventional electric cooktop rather than gas/propane, so maybe these hold up better on non-induction electric stoves?
It’s typically the plastic handles that limit the temperature to 400° for oven applications. Most people don’t hold the handles to the heating elements on the stove top.
I like the metal handles better, but yeah they can get stupid hot.
My mom has a set of pans that are probably 25 years old. They’re fine, except the handles are starting to look brittle. It’s not cost effective to replace them so she washes them by hand. I think I’ll surprise her with a new set she can put in the dishwasher, but I know she’s going to keep using the old ones.
