Bought one of these last time around. Very sharp. I was surprised by the handle. I expected it to be slippery but it’s really not. The handle is small though. I have large (not huge) hands, so I prefer a larger handle.
I am used to European chef’s knives so the thinness and lightness of this knife makes me feel like I need to treat it more gently. I always think it’s going to get damaged. Probably just because I am not used to Japanese knives. If you are accustomed to the bulkier knives, like I am, you’ll know what I mean.
For the price, it’s a good knife. I don’t know if I would pay full price though. It is a nice supplement, but I’m not ditching my old German blade any time soon.
I’m planning on getting the 4.5" now. I think this style would make a great paring knife. That is where I really need this kind of precision.
