Its very frustrating. I take a diabetes script that is hard to come by. I can order it within a week of my last dose. But its never in stock. Insurance companies are evil!.

Chicken salad Sammy for lunch was ok, Walmart loaded white cheddar popcorn for snack that was pretty good.

The breakfast poll the other day got me hungry for all the unhealthy stuff :sad_but_relieved_face: .

Settled for a “healthier” version of a pancake this morning.

After learning earlier this month (on Reddit, of course) what goes wrong with “the first pancake” and how to make a “perfect looking pancake”, I decided to use a nonstick pan without any butter/oil/grease of any kind.

The only ingredients are: Old-fashioned rolled oats, cottage cheese, eggs, and a tiny pinch of salt.

(Plus blackberries nuked with a few drops of pure maple syrup, and a red pear on the side)

Yummy!

We need freezer space so today I’m roasting 9 turkey thighs. Today will be a normal Thanksgiving dinner. After that will be turkey sandwiches and maybe freezing some for future sandwiches. Or maybe I could find a casserole recipe.

Does anyone else here like to put cranberry sauce on a turkey sandwich?
