At the suggestion of a few internet strangers in some cooking subreddit (IIRC), I bought the 7" Wusthof Santoku (Wusthof Classic 7" Santoku Knife) last time it was on Woot and I love it. I’m barely an amateur home cook, so if you’re mowing your way through a pallet of onions 7 days a week, you might want something bigger (or gasoline-powered or whatever), but for my typical sous-chef duties when my spouse is making vegetable soup or a stir-fry or the like, I find this knife to be in the Goldilocks zone and my having picked it up for almost half price was a treat.
And I’m now realizing that this one is neither a santoku, nor 7", so maybe my comment was unnecessary…
