Spinach and queso …2 best ever!
Love onion dip, but not with tortilla chips (eew!) - Potato chips only.
You just haven’t had the good ones. Well-made hummus is so yummy! (Hint: what you can buy in a grocery store normally isn’t good.)

My favorite is bean dip - refried beans with queso - eaten with tortilla chips. I can make a meal out of just that.
Next up would be nachos - I mean, why wouldn’t you want all the things on top of your tortilla chips? Queso, chicken, beans, pico, salsa, shredded cheese, cilantro and jalapenos fresh from the garden… yeah… Mexican for dinner tonite for sure!
Tortilla chips are good with salsa only, queso only, etc.
But not with onion dip! Bleh
But they’re pretty good with spinach and artichoke dip, too.

Chicken pot pie
Similar concept to like oyster crackers, the tortilla chip can add a desirable crunchy texture to an otherwise mostly soft dish. The saltiness of the chip compliments the creamy, buttery flavor of the pie well.
I suggest first breaking through the crust and then using a tortilla chip to scoop and enjoy steaming hot contents within.
Where are the queso and guacamole options???

This is a local family here in Utah that started a salsa company. Their salsas are really great, and they have some creamy dips they make that are really good as well. Occasionally, you can find big tubs of their products at Costco for a good deal too.

I’d dip a chip in hummus. Sour cream is ingredient in many dips. Not just for pita bread. Or crackers.
Like bread, chips (aka crisps to those in the UK) are very versatile and dip-able.
Guacamole
no tomatoes as that is salsa or pico de gallo, is my current favorite. My sis-in-law makes a fantastic spinach dip which we typically have with baguette slices.
Dip! We don’t need no stinkin’ dip!
Cheese makes just about everything better. Period.
