Edited to add: I had no idea this beautiful pasta known as cavatappi existed and is quite literally Italian for corkscrew :exploding_head:

Rotini AKA corkscrews are best because of the balanced surface coverage you get of cheese sauce to pasta.

Elbow and shells are great but too much cheese sauce can get caught in them, same problem with penne/ziti.

It is less about the noodle and more about the cheese. Cheese can be multiple types and layered, and then the top gets a slight crunch on the cheese or add breadcrumbs. Yum

Extra cheese is rarely ever a problem. I like any smallish pasta with a curl and/or tube to it.

As a chef who has cooked professionally for 38 years, I can say with certainty that the traditional pasta in macaroni and cheese is elbow macaroni. That said, the main difference between the various pastas is the different shapes. They all should taste about the same. Unless you’re a 3 year old that only likes macaroni, except when he eats spaghetti or lasagna

Hahaha, I love extra cheese sauce, but I’m personally a fan of it being evenly distributed. Totally see the benefit of cheesy surprises throughout too.
