I wish chefs choice would get their naming conventions squared away, as “130” is meaningless.
that said I have this product in a 15degree for my japanese knives and it’s a superior product. as a former edge-snob and recreational sharperner (edgepro+shapton stones) this puts on as good an edge in a fraction of the time and hassle.
Right, even when you look at their website it doesn’t make any sense at all.
And as you said, I love ours, keeps my Wushtof knives super sharp and have even given one as a gift to my daughter and son in law, they love it too.
