OlyKraut Sauerkraut - Original & Curry

OlyKraut Sauerkraut - Original & Curry

So this has several notes about refrigeration; would it be required only after opening. As i have never received any refrigerated shipment to my aaddress.

Based on what I’ve read on the manufacturer’s web site, it sounds like you would need to refrigerate it upon receipt since the ingredients are raw and would need to be preserved (see their ordering & shipping policy). But they also should last 6-8 months in the fridge, according to their FAQ.

It wouldn’t surprise me if they shipped the jars with cold packs to keep them cool but I don’t know that for sure.

(Please note: I don’t work for Woot, I just volunteer to help out here on the forums.)

Hi Folks! So our product is naturally fermented and unpasteurized so that the naturally occurring bacteria that are responsible for the fermentation are still in the finished product. We then refrigerate it and that slows the bacteria’s metabolism waaaaaay down so it becomes more stable. When we ship it, depending on the conditions, the product can warm back up and the bacteria start to ferment again. What that means is that they start making more lactic acid and carbon dioxide. The pH or acidity of the product is actually why its so safe to begin with, so it’s not a safety issue. What might be a bummer is that the carbon dioxide can start to pressurize the jar and it may be a bit exuberant upon opening, or even start to leak a bit before you get to it. We recommend opening it over the sink, giving the outside of the jars a good rinse, and then stick them in the fridge when you get home. It really should be fine. We also only ship on Mondays so there is no risk of the product sitting in a warehouse over the weekend to reduce the amount of time out of refrigeration. We are committed to using the most sustainable practices possible and so we aren’t currently using styrofoam cold packs but we do add a single ice pack when the weather is going to be warmer and in the summer we just ship 2 day air and charge extra for shipping because it really gets expensive! I’m so glad to hear that you’re enjoying our product at Harmon’s when it’s not on Woot though! We have really enjoyed working with them.

I love a good sauerkraut (though it’s difficult to spell correctly).

A raw unpasteurized kraut is the only kind I get, though we usually make our own in a ceramic crock we have.
It has 2 ingredients, cabbage & good salt.
This year, the weird weather ruined our cabbage crop so we’re buying it.
