How does it work as a bread knife? (I don’t see serration).

Slicing only. Not sawing, chopping, nor stabbing.
Dang, inflation has not been kind. I got the 14" for, I think, around $20 (over 20 years ago). Chef wages haven’t tripled in that time. I love mine, but at this price and with the frequency I use it now, I’d just get a $10 jobber at the restaurant supply.

It’s not a bread knife. It’s for slicing meat. Like a roast. If you want the very best bread knife, you’d get the Global SAI-05, SAI Bread Knife, 9", Stainless Steel… Nothng better and it will last over several generations.
You probably bought the Victorinox Forschner 14" Slicing Knife which today sells for about forty bucks – exactly in line with a 20 year inflation.
I’ve got one of these and it’s a great knife for slicing deli, and carving meat on a cutting board. That is to say, I use a boning knife to remove the turkey breast meat from the bones, and then when the meat is on the cutting board, I use this knife to make the most clean and even slices.
This knife is the real deal. Just be careful when washing it cause it’ll slice right through you if do something foolish with it.
Yeah, but they didn’t state the reason. Is the reason a secret? All we know is there is a reason. What it is remains a mystery unless it has to do the the context of the post.
Learn how to use a sharpener and more importantly a straightener to prep a knife for slicing. (It’s different from prepping for chopping.) If you do it right, it’ll buzz through roasts, tomatoes, and bread incredibly easy. You’ll never need a serrated knife again.
Ouch $189 for a bread knife. Not in my lifetime. That would buy a lot of butter for warm sour dough bread!
