I do know she browns the roast first by turning the oven very hot for 1/2 hr or so. 400-450 degrees. Then down to around 300 I think.
We use a digital thermometer for chunks of meat lately.

Though most any good meat thermometer will work.
I’d cook to 130-140 internal temp with 1/2 hr wrapped in foil and rest. The resting, not in the hot oven, should bring juices back into the roast & raise temp another 10 degrees or so.

Bought a chunk of beef today at Costco. A 12lb beef brisket.


I plan to put it in the smoker at around 6 or 7 am tomorrow and it to be done by 6 or 7 pm.
I’ll cook it at 225 degrees with hickory smoke to 195-200 internal temp. Also a hint of mesquite added at first.
It’s been sunny & temps to 50 the last few days.
Time to drag out the smoker & the grill!

K is having a friend stay over tonight. just brought in all the empty boxes we brought back from N’s place. made up N’s old bed with new sheets for the guest. and now we’re ready to collapse. we left that last bit of furniture for him to assemble on his own. lol, we’ll see!

we offered him his old dresser. it’s nice solid wood from This End Up. he is going with a black and white theme, and is disappointed the dresser is wood. but it’s free!!

Tell your son how lucky he is that mom and dad gave him a start. We didn’t have a thing, not even sheets! It looks like a nice place.

Same here, a bone cold rain! I am wearing fleece and sweats and still I am cold! But we did happen to get Bohemian Rhapsody from the library today, it is a fantastic movie!! No wonder Rami Malek won best actor!

Thank heavens for grandkids. Just had one come over and figured out how to address envelopes for me. Last week she was here and designed the invitations for our 50th wedding party. The other grandkids help out, too, but this one really came through for me.

mr mick is on clear liquids today… has to have another upper gi on Tuesday to see if the blockage is all gone, clean it out if it is not and maybe stretch the esophagus again.

has to have it done at the hospital…cause ya know maybe complications. the hospital will call with a time on Monday… hoping it ain’t like 6 am…

Mississippi Pot-Roast

Ingredients:

1 (3-4 pounds) chuck roast
1 packet ranch dressing mix
1 packet au jus gravy mix
1/4 cup butter
4-5 pepperoncini peppers

Instructions:

 
Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter.

Cook over low heat for 8 hours. Shred with fork. Serve with noodles, rice or mashed potatoes.

Tip: Not familiar with them, I was looking for fresh pepperoncini peppers. You can find them in a jar at Aldi’s and other grocery stores. And I put 8 pepperoncini peppers in, yeah just a little too much. Only made it one time so far (new recipe- found online), and I’ll follow the instructions next time. It also recommends you go low and slow with the slow cooker/crockpot. The roast is great for sandwiches too!

We had that at Jim Gill’s birthday party.
Oogie loved it.
Then she noticed the peppers.
We had some of it with leftovers yesterday.
She picked out the peppers.
Yay! More for me!
Wait until she finds out there is ranch.

Were the whole peppers just put in the crock?
I’d buy the slices or cut them up so they’d be mixed in later.

I think my dresser it about 45 years old. Or more. Not pretty, some of the drawers need reglued, but it is functional.
Oogie has on that was her grandmother’s. She ylthinks it is 100 years old.

Heeeeeey Greenies! I’m still alive. Extra super busy last week at work. Definitely one of those weeks.

Did a lot this weekend, even though we weren’t supposed to. Friday night was chill after I stayed late at work. Played some new to us board games with the kids. They seem to really enjoy Monopoly Junior and when they played again yesterday they only needed minor guidance from us. They’re super competitive, which is good, but overly enthusiastic with their expressions of winning and losing. We’re working on sportsmanship. It’s hard for a 4 year old.

Saturday morning was a slow start to a busy day with breakfast at home. Since the calendar flipped to March it is officially Irish Dance Performance season. All of the kids danced at a local restaurant/brewery on Saturday. Got there at 11 for 2 sets (12PM and 2PM). First set was good. Oldest did well, although I’m starting to nit pick her now that I’ve learned some stuff. Twins were tiny and adorable. O was not ready for and did not like the group dance. She ended up crying and walking out to us during it. All good though. She just sat out during the second set. J just hammed it up in his little outfit.

Got home around 4 and thought we were done. For some reason we though we should re-arrange our living room. We had talked about it after getting Jack Jack. With the extra crate and all of our stuff, it was getting a little cluttered around the room. We had a lot of wasted space in the middle of the room that was constantly getting filled with toys and stuff. So we decided to rotate the room 180 degrees and section it off from the front door, powder room and closet. Took this time to do some cleaning/purging as well. Moved some chairs that haven’t been moved in years and founds lots of “goodies” (and lots of crumbs…). Had to take the TV off the wall and move it to the other side then reconnect everything. Exhausted by the end of it and the Mrs and I were starting to peck at each other. She went to bed after getting the kids down and I unintentionally fell asleep on the couch while watching TV. Ended up sleeping there the whole night with Jack Jack.

Sunday was finishing up the re-arrangement. Went through the kids library and purged a bunch of books. We’re still finalizing placement on a few things but I think I’m pretty happy with it. I used to sit in a recliner by myself and now sit with the Mrs in a dual love seat recliner. We’ll see how long this last :laughing:
