Will a standard twin fitted sheet fit (and stay) on this?
It’s pretty much the standard size for a twin mattress. As to staying on, the plastic probably doesn’t have the gripping properties of a mattress. You might look into sheet clips. I started using some on my mattress and no more issues with the corners coming off.
