What is growing in your yard?

Anyone here with experience canning?

I just harvested my first season of muscadine grapes, boiled them down, strained, added sugar and pectin per the instructions, and 24 hours later in the fridge, it still has not set. It tastes really good though.

Hmm interesting. What are those grapes like?
I’ve not preserved grapes before so can’t speak on their texture, natural pectin levels, and such. Since you strained I presume you’re making a jelly. Issues could be due to liquid quantity to sugar ratio though you stated following a recipe.

I’ve had some jams turn out loose, more like a sauce before. Think it had to due to the type of berry I used and its natural water content in comparison to the ratio of other ingredients.

You can add apples to get natural pectin.

If you got your pectin dissolved properly, it should set, unless you didn’t use enough or had too much liquid. Kudos on the taste!

It has grown a branch about 8 feet from its base, headed toward my shed. I’m afraid it may develop the ability to use tools.

I actually add apple peels (when I have some) to my bone broth, to give it even more body and a subtle sweetness to counter the ACV.

@wootevil - maybe try asking over on the Whatcha Eatin thread also - some of those folks might have additional canning experience.

thank you, this was my first attempt, google got me so far, obviously its something that requires experience. just read that grapes can take up to a week to set (weird) so I am going to give it some more time. If not, I have a really yummy reduction syrup to drizzle over cheesecakes.

I’m pretty adventerous in the kitchen, but canning is one thing I’ve not much experience with.

@Queen89 - Added perk - Wouldn’t the apples take in the flavor of the muscadine grapes over time? (PS: I LOVE muscadines!! And muscadine jelly/jam/preserves.) Seems like the apples would add bulk and taste like the original muscadine concoction, (a good thing!) so long as they’re cut smallish. Am I thinking right?
Even if the apple pieces don’t take the muscadine flavor, they’d still taste good!

Maybe add some small pieces to a few jars, not all, as an experiment?

What do you think, @Queen89 - and anyone else with experience canning/preserving?

Yes! Or a mash if you want a different texture? Juice works too.

So i know it will b hard 2 c n this pic…but after my 1 month vaca, my passion vines decided to creep onto my rose bushes…n a major way…and if u know about tendrils, u will understand what it will take 4 me to un-ravel these and get them back onto the arbor

Just finished it…couple of rose pricks along the way. Just love gouges of thorns that poke my 60+ yo skin…we will c how they do. I will survive :slight_smile:

Garden updates:
Harvested another zucchini (4th or 5th total) very way less than years past.
Another 2 baskets of tomatoes :tomato:
Some critter is taking bites out of some! Lost 3. I think squirrels.
Gonna stew the tomatoes


into jars for Winter and use zucchini in pasta.
