Personally, if I wanted a baked potato that badly, I would have checked the sour cream before baking the potato!
That said, I have had sour cream that “expired” a month or two before I ate it and never had an issue.

Yes, but spoiled or moldy sour cream have different tastes than the good stuff.
I don’t follow dates, especially for sour cream. It’s the look and sniff test first, then a little taste test if it passes the first two tests. I’ve had sour cream go bad before its date and I’ve had plenty more still totally fine after its date. If it doesn’t pass the look and sniff test, it gets tossed regardless of date.

Sour cream is always ‘ripe’. Definitely going to use it. Crazy only about 1/4 of people agree with me.
I’m reminded of the time my former wife asked me to smell the catfish nuggets before she tossed them. I fried them for dinner. For some reason, she and the kids chose to have something else.
Make like a potato and get Baked. Then revisit the situation .
I had a big container from Costco in the fridge that I forgot about; never opened. The date was close to a year past it’s prime. I was curious and opened it up, it was fine. I used it a few times with no ill effect but the psychological worry about eating expired things got to me and I tossed it. I’ve watched too many ChubbyEmu videos about people ingesting questionable food and that kind of brain worm gets squirmy.
I hate to admit it, but I’d probably the same thing.
But people shouldn’t listen to me - I get food poisoning more regularly than most people
I would throw that right in the trash. I am not trying to have digestive issues over some sour cream.
