I grew up in cattle country working on ranches and in kitchens my whole life. This looks like a decent cut of beef but not worth over $20/lb. It looks like these cattle got way too much exercise for wagyu. The steaks look plenty fatty but the lack of marbled fat within the muscle tissue tells the whole story. These are wagyu cattle raised like angus cattle (sent to graze in large pastures where they wander around looking for fresh grass, often walking miles per day) and fed extra grain to fatten them up. I bet they taste great. If someone bought me one I’d eat it happily, but I wouldn’t waste my money on it. The marbling is what makes wagyu worth big money. The rancher needs to keep these babies indoors and massage them daily as well as feed them beer and ice cream. I’d happily pay this much for some BMS 4 or 5 wagyu but this looks maybe 2. This is like when your weed guy tries selling you brown, seedy bud for full price claiming that its still awesome and a reputable strain… Yeah, but its brown and seedy. I pay full price for the good stuff. This ain’t it, sorry.
I’d be much more apt to buy this at around $12-$15/lb. It is still wagyu after all.
