Toss it and use plain Greek yogurt.
Simple, hallow out the baked potatoes you have and mash up with the sour cream. Fill up the skins and make twice baked potatoes. If there was anything starting to turn the sour cream, the baking should make it fine.

I donât take chances with old dairy products anymore (not explaining!), so I toss it & just add a lot more butter.
And probably shredded cheese.
And crumbled bacon.
Maybe some chives.

Itâs either good or itâs got mold â generally around the rim.

Ah yes, but not being able to see said date means it could be tomorrow, yesterday, or over a year ago. Without the date for reference, itâs really hard to tell because sour cream is already sour. XD
Now if this werenât a dairy product, I would probably be backing you up bere. Like with chocolate, or vinegar based hot sauce.
Also worth noting. With things like sour cream and similar dairy products. Just because there is no visible mold on the surface, doesnât mean there isnât something growing IN in under the surface.

You know, there is a reason they call it SOUR CREAM. Slather it on and get on with it.
Hint: the microbes are always there, just in super tiny amounts you canât see. Otherwise, it never would have turned sour to begin with. This is why it can be pasteurized and sealed but still has to stay refrigerated, and not stuck on a shelf like mayo with ârefrigerate after openingâ on the side.
